I have a major sweet tooth. I come from a family where dessert is never a question of if, but what. Unfortunately dessert is not always friendly to the waistline. I found this recipe on The Sugar Free Diva and was practically giddy. Only three ingredients, and its South Beach Diet Friendly? Sign. Me. Up. Whyyy didn’t I find these three ingredient peanut butter cookies sooner?!
These magical little gems are great for curing the sweet tooth, and they’re kid approved! I will say, I also like to sprinkle a few dark chocolate chips in there to break up all the peanut butter. I know that there are only three ingredients, and peanut butter is obviously the main one, but when you try these you’ll most likely have the same reaction I did. These are delicious, but they are super peanut buttery. I know, that’s obvious.
Ingredients:
1 Cup peanut buter
1 egg
1/3 cup sugar substitute (I use Whole Earth Sweetner)
Mix the ingredients together, roll them into little dough balls, then bake at 350 for around 6-8 minutes. Poof, cookies. I hope you love the easy three ingredient peanut butter cookies as much as me.
