Seriously, these muffins are the best. I get requests from my son, even, to make these. They are so simple and delicious that it’s amazing to me that they are grain free. I could eat these all day er’ day. The best grain free muffins recipe was found on thirty handmade days, and it forever changed my life. I even make these when I’m craving something a lil sweet. They hit the spot so good.
The beauty of these, well there are several factors, but the fact that you make these in the blender is down right satisfying. It’s like the thing that holds these together is witchcraft and I am 100% okay with this. I don’t know if you feel they way I do about mornings, which is a big middle finger, but if you do, these will make you a little excited about mornings. Remember, the kids will love these too, which isn’t always great if you’re down to one muffin. Then it turns into the hunger games in my house.
The Best Grain Free Muffins Recipe
2 Bananas
1 cup Peanut Butter
2 Eggs
1/2 Teaspoon baking soda
1 Teaspoon vanilla
And then I added dark chocolate chips
Preheat your oven to 400 degrees. Grease a muffin tin or mini muffin tin. Put all your ingredients into the blender, except your toppings. Blend it, blend it real good. Pour batter into muffin tin of choice, then add your topping (dark chocolate chips or whatever else you want basically). Bake for about 8-9 minutes depending on your oven. Boom shaka laka you have gorgeous little muffins that your kids will want to get their sticky little hands all over.
