I had never tried eggplant before, and these healthy eggplant appetizers were a fantastic recipe to try it out with. Its light, easy to make, and really fresh. I found this recipe on Kalyn’s Kitchen, go check it out.
Roasted egg plant with garlic, feta cheese, rosemary, and a squeeze of lemon. So. Fresh. This would also be amazing on the grill for summer (these were done in the oven). Basically you chop the onion, the garlic, and the rosemary, mix it all together, then squeeze some lemon over it. Pop in the oven then when done, sprinkle feta to your liking. I added more rosemary and some pepper. Its easy and fast and served best as an appetizer. For me they started to get a little mushy after a while and I did not care for that. I also tried to warm them up the following day in the oven, but it still was too mushy for my taste.
All in all these healthy eggplant appetizers were a great recipe to try eggplant out.
