Bunless Egg Sandwich

Hey y’all! Sooo, I like food. It definitely likes me back. I’m not much of a cook, but I’ll tinker with recipes from time to time. This isn’t so much of a recipe as it is a concoction. Its a bunless egg sandwich, and it makes mornings suck less. It’s fast, it’s tasty, what other boxes do you need checked?

Mornings are important, and going to bed early and getting up early is the basis to a productive routine. It doesn’t mean I have to like mornings. Once I get up I’m fine. Its just, the getting up that’s the tough part. By nature I like being a night owl, but when I stay up late I don’t get up early, and then I’m mad at myself in the morning when I don’t get anything done because I can’t peel myself out of bed. Its probably best not to set yourself up for failure. I guess.

I love eggs, and as dumb as it sounds, I don’t always feel like getting a pan out to scramble eggs because we’ve already discussed that mornings are hard, and dishes. Hence, the bunless egg sandwich is born.

So in the photo up there, that is actually two sandwiches stacked. It was more aesthetically pleasing to stack them, so. I use a sistema egg cooker (not a sponsorship, this thing is just really cool) and cook one egg at a time according to the directions of the sistema. I do these as like a sunny side up type egg, but cook it a few seconds longer so that the middle isn’t still runny, but its not cooked solid either. I’m complicated. I also cook a couple slices of turkey bacon, which I like to be super crunchy. A slice of low fat cheese and you’re done. Salt and pepper to taste if you like.

I follow the South Beach Diet, and I love the way the program (I do have a sponsorship with South Beach Diet) teaches you about food. What food does to your body, how it affects your blood chemistry, and how you can develop a more rounded and practical nutrition plan.

Which, bonus, is not so difficult to follow that you give up. So anyways, this little gem of a breakfast sandwich you could have in Phase 1, Phase 2, or Phase 3. Score. I hope these make your mornings suck less, too!
